I keep forgetting to show you all Hubs hard work (his friends too) . The basement is moving right along. I am working on decorations for the basement also. My mom also let us use my great grandmas loveseat in our office. Yes it is a hit with the girls! Reese and Serenity especially.

Immune system

I tell ya what, I hate being sick! I feel as though my immune system is not as good as it used to be when I was healthier. I have been doing some research about getting healthier especially since we are really trying again to have children.

Here's how my thinking goes, please tell me you guys have this same struggle.........

~I love fruits and veggies, but they are so expensive and go bad fast.

~I want to start a garden and be more "organic" but I have a black thumb.

~I watch documentaries on eating healthy then when I go to the store they either don't have what the documentary said or it is 2 million dollars!

~I need to spend more in healthy stuff because in the long run it will save us money and our lives.

~I just flat out don't wanna cook sometimes and fast food is soooo easy.

~I only go to the store once a month and spend a very small amount on groceries.

~My taste pallete is stuck on pop, candy, and salty stuff.

~I wanna eat and cook healthy then I watch my fave the Pioneer Woman and I then want to make what she makes.

Uggghh I could go on and on but have decided I am just going to try and develop a plan that fits good for us and incorporate all kinds of different recipes that are healthy and just darn good. So some days we will be on a plant based diet and the next we will be pioneer woman cooking. One of these days the Snell's will be healthy!

For today it's an Erica Concoction of a plant based diet.

I will update you with the recipe and results :)

2. How did you meet? {What's your "love" story?}

Oh that wonderful day in Nursing School! I had seen him around a few times, actually my first day of class he marched in late and I was like hmmmm he's handsome! Then one day I was standing in the nursing school parking lot, getting ready to go to lunch when hubs and another one of our classmates Heath asked a couple of us if we wanted to go to Chinese for lunch. It all was over from there! I fell in love with him just listening to him talk. He of course then had to go on a wild goose chase to win over my heart but it's all history now. :) I am completely smitten.

3. If married, how long have you been married?

3 years

4. If you are married, where did you get married at? Big or small wedding?

We had the most wonderful small wedding! A few friends and family went to Pigeon Forge with us and we had an awesome getaway weekend. I still smile ear to ear thinking about it. Seriously everything went perfectly! Then we had a reception back home with friends and family. Wouldn't change our small wedding for anything. (Other than having a dance with my dad :( )

5. Do you have any nick-names that you call one another? Do share!

Babe, Baby, Mikey, E, Hubs, Punkin Head, Punkin, Jerk, Douche haha sorry totally being honest here ;)

6. Name 3 things you love most about your honey.

His work ethic. He works so stinkin hard! I never thought there would be a man that works as hard as my dad but he sure gives him a run for his money. He is always providing for us.

His personality. He is hilarious. Like the funny that your sides ache from laughing so hard and you have to make sure you go to the bathroom or your in trouble! He is extremely witty and even when he is ticked off at someone/something you have to laugh because he is so spot on!

His unconditional love for me. No matter what, I know he loves me. Even when he thinks things are silly and minut, if I think it is a big deal he is there for me. He is just awesome!

7. Tell us how he proposed? Or your ideal proposal?

Wellllllll without making him sound like a jerk :) I will just say he proposed twice. First time was super cute, he put the ring on our cat's collar and I was like what the heck!!! and then was like Yesss!

Then the second time he sent me on a hunt through the house following rose petals and cards ending with the ring :)

8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals?

Ummmmmm he doesn't like valentines day! haha He is a Tervis Tumbler type of guy and cute card.

9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch?

Both!!! I love anyhting romantic but also love couch time watching a movie! Really I just like anynight with him because he works so much.

10. Tell us one thing you'd like to do with your significant one day. If you could do anything? Go anywhere?

Go to New Zealand (his birth country) and spend a few months just traveling and spendning time together. Taking pictures, eating food, and spending time meeting his family.

11. Tell us what you plan on doing on this Valentine's Day.

We are going to a wedding this weekend. He works V-day so I will watch some lovey movies.

12. Are you asking for anything this Valentine's day?

Nope :)

13. Give us one piece of advice of keeping a relationship strong and full of love.

Don't keep a scoreboard of wrongs but a diary of rights. If something bad happens in your relationship happens, work on it, talk about it, then move on. A scoreboard of wrongs will destroy a relationship. If you keep a diary of great things you will forever be thankful.

Lasagna Roll Ups

So I have been seeing alot of different ideas for Lasagna. I like the whole roll ups thing. So I made some just off the top of my head. Definately not as pretty as all the pictures but super yummy.

1 lb sausage cooked with italian seasoning, chopped garlic, 1/2 chopped onion, Chopped fresh mushrooms, 1/4 chopped green pepper
Cook till sausage is done then add any kind of Sauce.

Boil Lasagna noodles then drain.

While all this is cooking make your cheese mixture.
1/2 cup of Ricotta cheese, 1/2 container of cottage cheese, add mozzarella cheese, parsley, and parmesan cheese ( I just eyeballed it to my taste).

Then when it is all done spread cheese mixture on lasagna noodles, roll up, put in baking dish, cover with sauce, Cook at 375 for 40 mins then add cheese on top and broil till cheese is bubbly.

I have a hard but easy job.
It's second nature now.

Start an IV. Give medications. Dress a wound. Wipe away anything from tears to blood. Watch people kill themselves slowly while others do anything they can to keep themselves alive.

You become numb to things that you NEVER thought you could. You just do things, it just happens, sometimes you don't even think, it's just a reflex that you develop as an ER nurse.

You become jaded, I mean REALLY jaded. You start to see everyone the same. Someone trying to get drugs or to cheat the system. You want to care but it's hard to see past the perpetual revolving door of these people.

I try to go into work everyday with a new attitude but within 5 minutes it's shot down. I have been thinking of a career change. The working of weekends, holidays, days, nights, evenings has really gotten to me.

But, I realized tonight. I am very lucky to have the education that I do and the job that I do. And hopefully at some point I could change/save someones life. After all thats what nurses are for.

Creamy Cheesy Chicken Enchiladas

1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup or Campbell's® Condensed 98% Fat Free Cream of Chicken Soup
1 (8 ounce) container sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese
10 Mission® Fajita Size Flour Tortillas, warmed
1 medium tomato, chopped
1 green onion, sliced
Directions

Mix soup, sour cream, picante sauce and chili powder.
Mix 1 cup picante sauce mixture, chicken and cheese.
Spread about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-quart shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.
Bake at 350 degrees F for 40 minutes or until hot. Top with tomato and onion.

TIP
For 2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound boneless chicken breasts or thighs, cubed, 5 minutes or until chicken is done. Drain and chop chicken.

Ok so the other night my friend Donna and I were trying to think of cheap fun things to do. We were talking about how fun scavenger hunts are. Well we found this thing online called Geocaching. Hello have I been under a rock???? Why have we not done this before??? Poor hubs had to work but the rest of us set out on our "scavenger hunt". Look it up! It's a nationwide scavenger hunt. We seriously had a blast and can 't wait to do it again. We have even decided when we go on vacations we will do a few "caches" wherever we are.

It is so crazy to think another year has come and gone so quickly. This past year has been amazing with the building of our home and many cherished moments with friends and family. I love the feeling of a new year and a "fresh start". It's an OCD cleaner and organizer's dream! :)

With each new year I love having resolutions, or "goals" to fullfill.

I hope you all had a wonderful Christmas! We sure did! Lots of parties, food, loving on babies, playing games and watching movies. I have a ton of pics but am going to wait to edit them after this week slows down.

But, in true Erica form the tree is down, the decorations are stored away with care and the cleaning bug is in full gear! Christmas day I worked and Mike had to work at night so as most days go in the Snell house I met hubs as he was leaving out the door for work and I was coming home. I was content though to turn on A Christmas Story, take down decorations, deep clean and organize, eat frozen pizza, and have a nice visit with my friend Donna.

Isn't it funny how the most unplanned and unconventional christmas day memories are the best

It's no secret

I have infertility issues

like to the point that when people ask me who I am

I no longer wanna say Hi, Im Erica

I want to say Hi nice to meet you, I'm Infertile

I guess I just never thought "it could happen to me"

Honestly I was kind of oblivious.

I always thought if people didn't have kids

they didn't want them, not that they were unable to.

I read one of the most breathtaking birth stories the other day

YES I LIKE TO TORTURE MYSELF!!

My stomach seriously ached while reading it

that empty hole in my belly was screaming at me

I am pretty sure it is still aching somewhat.

I read about the torturous labor pains and so on

At that moment as tears ran down my face I thought

I would do anything to experience that.

Weird isn't it?

That I would want that kind of pain

but that pain means life and something you created.

It is so hard to explain this to people

Truly it is hard to explain to myself

And really there is no way to understand

unless you are in it or have been thru it

I never wanted to be that girl

that obsessed over having a baby

I never wanted to cry everytime someone announces they are pregnant

I never ever wanted to be a person of jealousy

I never wanted to be a person of comparisson

I never ever wanted to doubt why things happened the way they do

But I am that girl.

Why am I writing this?

I don't know.

But it feels nice to open up.

To let in a little light on a subject that is truly misunderderstood.

Thanks for putting up with my post and if you have a friend dealing with infertility.

Give em a hug because even though they don't say it or show it.... They need it.

To describe this Thanksgiving I will choose

PERFECT!!

But first...

Since I can remember we went to Odon to my Great Aunt and Uncle Ruth and Warrens

I never thought it would end

There is just something special about it

Just one of those things that just always made you smile

Unfortunately that will now just have to be memories

Most of my great Aunts and Uncles have moved to Florida :(

So what do you do??

Create new traditions!

And boy this is an Awesome new tradition.

Christmas and Thankgiving all wrapped into one.

Lots of food, fun, family love, pictures, games, presents and more!

I would try to explain it all but I just can't explain this feeling of happiness!

They pretty much contructed our basement in 4 days!

Last night Mom, Dad, Loren, Kari, Cooper, Griff, and I went to The Circus. Holy awesomeness batman!!! I loved it! I was a little apprehensive that I wouldn't like it. I was intrigued the whole time. The bears and chicago Boys were our favorites! Im pretty sure I gained a million pounds eating junk!

Day 17

I'm telling you!

These Days of Thanks are hard to decide!

I wanna do more than one thing

then I get so overwhelmed I end of just trying to think of the little things

Within the last 5 minutes

I have thought about all the wonderful women in my life that I am thankful for!

A grandmother that is the most loving caring woman I have ever met

Not a bad bone in her body

She always knows exactly what to say

and NEVER NEVER NEVER Judges anyone

she is so forgiving and a true true christian

If I even become half the woman she is I would be truly blessed

A mother who is the true best friend

No matter what, my heart bursts when I think about my mom

I'm even teary eyed typing this as we speak

she means that much to me!!

Life would not be the same without her

No day goes by that I don't talk to her

I just can't, I HAVE to have some kind of contact everyday

A Sister in Law that is the most amazing mother and wife

she is a true saint

I love watching her interact with my nephews

and she is an amazing teacher

she is one person that I see that is truly doing what they were put on earth for

to be a teacher and mother

Oh man and all my friends, Aunts, Mike's mom Marge,

gosh the list could go on and on about the amazing women in my life

I have to say it's all these different women that make me who I am

And for that I am SO SO Thankful!

Day 18

Today on my walk/run I was listening to my music

and thinking about all kinds of things

I always forget how much I love "Me" time when I run

I don't even remember what I was thinking about

but I suddenly stopped

took in a huge breath of the cold air and thought......

What if I could never do this again?

I take life and the little things for granted

Life can flash right before your eyes

I just want to grab hold of it and hold on tight

I want to embrace every moment of it!

I get so caught up in things I don't have

or things I can't control

I just need to really count my blessings!

As I was thinking of all this I was approaching our house

and I thought wow the sky is always beautiful here

Maybe because we have finally found our place

our home

the place we want to stay

I don't know about you but I am having trouble with this 24 days of thanks.

I have TOO MANY things I am thankful for to even put it into one thing a day!

I think all day long, man I'm thankful for that, and well of course I'm thankful for that.

There are so many blessings big and small all around us.

So with these posts, trust me I have tons to be thankful for but I am trying to think outside the box

Each day, something that I am thankful for. Big or Small.

Today, I am Thankful for long beautiful car rides.

The kind that you listen to your favorite music.

You roll down the window to feel the cool breeze go thru your hair.

The kind of drive that you think about life and just "think".

It's amazing to me that most my thinking is done in the car.

(I promise I still focus on the road!)

It's time to yourself.

It's time to reflect.

Time to take in the beautiful scenery.

Although the drive I took today wasn't really "for a good thing"

it was a great drive.

Remember I was talking about Prince Charming and the Ball?

Well we went and it was amazing!

The "Ball" was the Memorial Hospital Gala and it was BEAUTIFUL!

Talk about a Fairytale.

It was so fun to get out with hubs and get all fancied up.

Before the Dinner we walked around the beautiful dome

and sat on the porch feeling the cool breeze.

It was picture perfect.

Wow, 27. It feels like yesterday I was celebrating my 21st birthday. I feel old! Like I should be doing something way more with my life by now. There are so many things I wish I would have done (or didn't do) by this time in my life. I was always told that time goes so much faster the older you get. ummm yes, like super ninja fast! I am almost having a quarter life crisis. I feel like time is slipping by and I am not taking advantage of it. So today I decided life isn't going to slow down I just need to speed up with it!

I had to work today ( who seriously works on their bday?, it should be a law you don't have to) but got out a little early and was able to go to see the new Footloose and get myself some ice cream. Dude! The new footloose, AMAZING!! Happy Birthday to me right there! I sang and danced in my car like I was 17 not 27! It was AWESOME!

We celebrated yesterday by going to Huber Winery and Orchard. It was pretty FANTASTIC!

Pinterest Crafttime {Initial fabric flower wreath}

I am going to start doing Pinterest Crafttime Posts :)

I have been seeing alot of wreaths, initial crafts, and fabric flowers.

I have been trying to figure out what to do for our front door.

I found a really cute pin but couldnt find where it was pinned from. :(

I wanted to give them credit for the idea!

So I just took the idea and turned it into my new creation :)

Whipped this up last night and hung it this am. Hubs even likes it!!

Life and living it....

WARNING: Long post and sappy so if you don't like long posts I have a shorter one coming up :)

There are 2 things that I think about all the time while going thru life.

Yes they are silly things but I am sure (hoping) lots of people think it.

I wish we could walk around life with music playing.

Like you see in movies.

The music that makes you even more emotional.

Be it happy, sad, or mad.

My other wish is to have pictures of everything.

Like the ones you see in your head and heart.

The ones you wish you could tuck away and bring out and show people.

Just as you see and feel them

There are moments in life that you think are minimal but make your heart so happy.

I wish yesterday there was a soundtrack.

And pictures taken like the ones I felt in my heart.

Mike and I are getting ready to go to a hospital gala, That is a whole post in itself :) But I was needing a dress, shoes, and purse of course. My mom needed to go to Bloomington for something so it seemed perfect to set up a date with my bff Lo. I overselpt and was a little late to get my mom, we were rerouted due to a bike race in btown, got lost about 4 times, stopped at 4 different places for my mom to use the restroom and each time they either didnt have one or said employee only. The place my mom needed to go to wasnt open and we had a little ~~argument~~ talk with the people at David's Bridal about just wanting to buy a dress and not wanting to make an appt. We even stood in line at Big Lots for 20 mins before just walking out. Yes, lots of bumps in the road but we just laughed it off and had a good time. I am pretty highstrung so normally I would have been ticked off all day from these things and just went home. But for some reason I was just at peace and enjoyed the day. Mom, Lo, and I went to lunch, did lots of shopping, and had some good girl talk. It was so fun! I can't explain to you how much my heart wanted to bust all day. It was just a good good day. On the way home mom and I had great talks and even teared up some. I love talks with my mom. After dropping her off I turned on the radio and rolled down the windows and breathed in the fresh crisp fall air. The scenery was beautiful and it just seemed like the radio was playing all my favorite songs. I sat back and just drove, thinking of all the curve balls we get thrown in life and all the blessings that are also thrown our way. Times like these I wish I had a picture of the day and could tuck it away and show to my children. I am truly blessed and I don't thank God enough. Days like those make life worth living.

I have been wanting to do it so finally got my hiney in gear!

It's all about the little things that make you smile and brighten your week.

Over my vacation week I got the good old Canon out and took pics of the things that make me smile and feel blessed :)

Invitations I made for our Fall Party at the end of the month. Anything fall makes me smile!

Little Bears that I still have from my childhood. Makes me remember putting out Halloween Decorations with my momma.

Amazing housewarming gifts from our lovely friends The Dooley's! You guys always make us smile.

This amazing smelling candle makes me smile as soon as I walk in the house. I seriously do the stop and sniff everytime I walk in the house!

A clean and organized Craft room. Pics of my little nephews. and the realization of endless possibilities with craft stuff and pinterest!

Never thought a microwave would make me smile so much! So many cool gadgets!

We are seriously blessed with this little sweet deaf cat. We actually layed in bed the other night having a conversation of how terrible it must be not being able to hear, then she sleeps so peacefully with all the commotion in our house and reminds us that silence is sometimes the most calming of senses.

My new Vera makes me smile really big! It holds everything, the straps are the perfect length and do you see it????????

Seriously if you don't have one of these, get one! Absolute blessing with Tile floors!!

Seriously a vacuum cleaner makes me smile! Its the little things!

shheeeewwwwwwwwwweeeee, who ever thought a vacation could be so much work!

This past week Hubs and I took a staycation.

About this time every year we take a weeks vacation.

Usually to Colorado to see our Friends so I am missing the Colorado weather and time

with the Seale Family :(

We decided to stay home, work on the house and yard.

It was alot of hard work but so nice to not have to worry about work!

We spent most of our days outside working on the yard.

Note to self: Pay someone to do it next time!

Atleast we got a good tan and shed a few pounds :)

I also took a technology break.

Seriously one of the best things anyone can do!

I forget how addicting technology is until you decide to put away your phone and computer.

I didn't blog, facebook, txt, call, email, or do words with friends for a few days.

At first I felt like I would die but then I realized how much we are distracted by just txting and phone calls!

Sorry if you have been trying to reach me!!!

I tend to get caught up in what others are doing and what others have and that I don't

so it was nice not to be distracted by these things!

Overall, staycation was a success and I feel all caught up now :)

I was kind of doubting my husband and his friends

Man Card last night!

We have always wanted to have a fire pit

furthermore

a nice area to have a fire pit.

We have a perfect back patio so

with 10 mins to spare last night before Home Depot closed

Mike, Brad, TJ, and I ran thru and annoyed the workers

and bought us a fancy smancy fire pit!

Anyway's back to the man card, it took these boys like 5 million different

time to start the darn fire.

Donna came in just in time and brought smores. mmmmmmmmmmmmmm

Nothing beats a smore!!

I have been working on organizing and decorating our new home

I have been hitting up pinterest for everything!

I saw this pin of a cute wall organizer from PB (pottery barn)

So I am working on a ~~knock off~~ snell affordable version.

I still need to get one more square cork board and file holder.

I gotta admit, before we moved into our house

I spent days on the couch (if I wasn't working) and watched TV and movies

Alot of people talked about how they never watched tv.

I am going to write a post about how awesome everything is but while We are enjoying everything being so awesome I will just post some pics and fill you all in on all the details of the move and all the things surrounding it!

I found this cute shirt at Wal Mart for $7.00!!!

And I finally found the new bedding for our room from Carson's!!! I have been searching and looking on pinterest for something and today I found THE ONE!!! On Sale 70% off... BOOOOMMM!

We had our final walk thru and we move in next week!!!

Special thanks to hubs for practically breaking his knee while jumping the tarp surrounding the yard to make it in time for the self timer to go off. Its those things that make me love you even more!!!

Ok so while we struggle to have little ones

Our Furbabies keep us happy :)

I know it probably isn't as fun to see our cats as kids but this is our world now

and I believe somedays it is just like having kids!

Esme is our little love doodle that we just can't wait to see what she does next

She is white with blue crossed eyes

it is something genetically with cats that if they are white and have blue eyes they are deaf

she is also partially blind

so her main sense is feeling

when we first got her we held her up to our necks and talked to her

so she tries to get right up next to us when we talk to her

she has a little problem with personal space :)

She has the craziest meow and doesnt realize how loud she is.

It is pretty stinking hilarious and I want to get it on video sometime

Everytime we come home from work or being out I think she has seperation anxiety

When we walk in if she is not sleeping you can hear her meowing

and you can find her doing this.....

Yes, whatever clothes we have laying around she will carry them everywhere in her mouth

so we come home to clothes all over the place

it is pretty hilarious!

Oh the live of a furbaby mother :)
