Keeping up Resolutions

One of my New Year's Resolutions was to spend more time with my nephews. The time of holding Griffin and singing to him, dancing around and making him giggle. Running around like crazy with Cooper and playing games with 4 yr old rules. I have definately loved spending more time with them. It helps fill that hole in my heart for the want of a child. This is one resolution I am happy to keep up!

Transformed 2012

I was recently blessed with the wonderful opportunity to go to a Women's Conference in Indy with some friends from work and their church. It was AMAZING!!! If you have never heard Tammie Head speak you should because she was amazing. All the different breakout sessions helped shape different aspects of my life and I am just feeling so good after it. God is good!!!

House Envy

I absolutely love my house but recently my dad bought a new house. oh man do I have house envy!! This house is amazing and has such character. Too bad it's in Knox County or I would talk hubs into buying it! I seriously feel like it is out of a magazine of The Smokey Mountains!

What's for dinner????


CHINESE PEPPER STEAK (BEEF)
1 lb. round steak
1 bell pepper
2 tbsp. butter
2 to 4 tbsp. cornstarch
1/2 tsp. Adolf's seasoned meat tenderizer
6 tbsp. soy sauce
Garlic salt
2 tomatoes, cut into wedges
2 beef bouillon cubes, dissolved in 2 cups water
Slice steak as thin as possible. Mix cornstarch, soy sauce and meat tenderizer. Add meat and mix well to coat. Set aside. Slice bell pepper in butter, remove. Saute' meat until medium, remove. To drippings, add bouillon cubes that have been dissolved in water. Stir to loose drippings. Add meat and cook on medium for 15 minutes. Add bell pepper and tomato wedges. Cook until gravy is thick. Serve over rice.

Baked Crab Rangoon

1 (8 ounce) package cream cheese , softened
3 tablespoons yellow onions , finely chopped
2 tablespoons lemon juice
1 tablespoon garlic juice , I used some from a jar of chopped garlic in juice
8 ounces crab or 8 ounces imitation crabmeat , finely chopped
16 wonton wrappers
water
canola oil , to brush on won tons
Chinese duck sauce or plum sauce , for dipping

Directions:

Preheat oven to 350°F.

Put cream cheese in a glass dish, and microwave for 30 secs., until softened.

Chop the onions finely, and add to cream cheese.

Add your lemon and garlic juice, and mix well.

Chop the crab finely, or use the blender. Add to cream cheese mixture, and mix in well.

Place a heaping teaspoonful of mixture into the center of won ton wrappers.

Rub each won ton in the grease on the bottom of the cookie sheet, and place each won ton on sheet. When all the won tons are done and on the sheet, brush a little oil on top, so they get nice and crispy around the edge.

Put in the oven, and bake for 8-12 minutes, depending on how crispy you like them.

When done, place on a layer of paper towels to absorb grease.

Serve with your favorite Duck or Plum Dipping Sauce.

Mmmmmmmmm



Need I say more? I'm trying all kinds if new recipes. Thank you pinterest!!! I don't always have what the recipe says so I just try to do my best.

Sirloin steak with garlic herb butter

Sirloin steak: seasoned with sea salt, cracked pepper, onion salt and garlic poweder. Cook to your preference.

Garlic Herb Butter: Mix a few tbsp of softened butter with garlic (i use powder bc im out of fresh) and freshly chopped parsley. Mix to your taste and put a tsp-tbsp on top of hot steak. Mmmm it melts so good :)

Grilled Asparagus: Asaparagus rolled in olive oil, 1/4 tsp sea salt, cracked pepper and sugar. Grill till sugar carmelizes.

Make long grain wild rice out of box :)
