Lisa....

I was totally not kidding when I said I wanted to be good at gardening and i was going to start with "Lisa". I feel like if you name things they grow better :) Erica gardening 101. So Lisa is this little Herb Garden we found at Home Depot. We will see how it goes and I will update about it. But like I have said before hubs doubts my skills. He actually started a Eulogy when I was planting Lisa. "Oh Lisa she was such a nice plant..." Jerk! LOL.

Lasagna Roll Ups

So I have been seeing alot of different ideas for Lasagna. I like the whole roll ups thing. So I made some just off the top of my head. Definately not as pretty as all the pictures but super yummy.

1 lb sausage cooked with italian seasoning, chopped garlic, 1/2 chopped onion, Chopped fresh mushrooms, 1/4 chopped green pepper
Cook till sausage is done then add any kind of Sauce.

Boil Lasagna noodles then drain.

While all this is cooking make your cheese mixture.
1/2 cup of Ricotta cheese, 1/2 container of cottage cheese, add mozzarella cheese, parsley, and parmesan cheese ( I just eyeballed it to my taste).

Then when it is all done spread cheese mixture on lasagna noodles, roll up, put in baking dish, cover with sauce, Cook at 375 for 40 mins then add cheese on top and broil till cheese is bubbly.

mmmmmmmm good!

Right smack in the face....

Much to hubs dismay I unfortunately like Justin Bieber. LOL. I love his song Pray. Tonight for the first time I saw his music video for it. I was in tears!

I have a hard but easy job.
It's second nature now.

Start an IV. Give medications. Dress a wound. Wipe away anything from tears to blood. Watch people kill themselves slowly while others do anything they can to keep themselves alive.

You become numb to things that you NEVER thought you could. You just do things, it just happens, sometimes you don't even think, it's just a reflex that you develop as an ER nurse.

You become jaded, I mean REALLY jaded. You start to see everyone the same. Someone trying to get drugs or to cheat the system. You want to care but it's hard to see past the perpetual revolving door of these people.

I try to go into work everyday with a new attitude but within 5 minutes it's shot down. I have been thinking of a career change. The working of weekends, holidays, days, nights, evenings has really gotten to me.

But, I realized tonight. I am very lucky to have the education that I do and the job that I do. And hopefully at some point I could change/save someones life. After all thats what nurses are for.

I am like the crazy cat lady only my house doesn't smell (I hope haha), I only have 3, and I'm not lonely. Ok maybe I'm nothing like a cat lady but I do think my cats are the cutest things ever! Reese has started something so cute lately....

She puts herself under the covers! Too funny.

Creamy Cheesy Chicken Enchiladas

Day 9/365


1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup or Campbell's® Condensed 98% Fat Free Cream of Chicken Soup
1 (8 ounce) container sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese
10 Mission® Fajita Size Flour Tortillas, warmed
1 medium tomato, chopped
1 green onion, sliced
Directions

Mix soup, sour cream, picante sauce and chili powder.
Mix 1 cup picante sauce mixture, chicken and cheese.
Spread about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-quart shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.
Bake at 350 degrees F for 40 minutes or until hot. Top with tomato and onion.

TIP
For 2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound boneless chicken breasts or thighs, cubed, 5 minutes or until chicken is done. Drain and chop chicken.

Geocaching... Have you heard?

Ok so the other night my friend Donna and I were trying to think of cheap fun things to do. We were talking about how fun scavenger hunts are. Well we found this thing online called Geocaching. Hello have I been under a rock???? Why have we not done this before??? Poor hubs had to work but the rest of us set out on our "scavenger hunt". Look it up! It's a nationwide scavenger hunt. We seriously had a blast and can 't wait to do it again. We have even decided when we go on vacations we will do a few "caches" wherever we are.
